MAÍZ cocina mexicana was founded in 2014 following many months living, exploring and gorging throughout Mexico's varied regions.

Once back in the UK we were soon experimenting with recipes and local ingredients to develop something to accurately represent the vibrancy of the country's cuisine. After some serious product testing, we opened our first pop up restaurant at the Bethnal Green Working Men's Club which proved to be a huge success, running for nearly six months.

Today MAÍZ continues to provide authentic Mexican flavours to the London food scene through various channels, including kitchen takeovers, market and festival trading, as well as providing events catering for private and corporate clients.

All of dishes are freshly prepared, using sustainable produce from within the UK and its waters wherever possible. In some instances we are obliged to source dried produce from Mexico, in which case we purchase from suppliers within the M25 and offset the environmental impact of shipping through green initiatives such as
